Elbert attended Garfield High School, graduating in 1968. He played football and was on the wrestling team. It was always a point of pride with him that he took home economics due to his passion for cooking and food. The University of Wisconsin awarded Elbert a full football scholarship, and after graduating in 1971 he was drafted by the Kansas City Chiefs in 1972. In 1974.
Elbert was signed by the Saskatchewan Roughriders, and played as an offensive tackle until an on-field injury ended his professional career in 1976. Elbert chose to remain in Regina and worked in marketing until he retired in 1998.
Elbert followed his passion for Kansas City style barbecue and in the early 90's introduced and operated Saskatchewan's best wood cookin' catering operation, Regina's Big E's Bar-B-Que. He wrote a cookbook, catered events such as Agribition, Dragon Boat Races and Craven Big Valley Jamboree. He won several barbecue competitions. Elbert also enjoyed managing the restoration of his 1981 Oldsmobile Regency Classic to mint condition. He obtained a black belt in martial arts, and refereed competitions.
Elbert "Big E" Walker passed away on April 27, 2015.
